Ajapsandali (Georgian - აჯაფსანდალი, Armenian - Աջափսանդալ) or ajapsandal (Azerbaijani - əcəbsəndəl) is a dish of Caucasian (Georgian, Abkhazian, Azerbaijani, Armenian) cuisine.

It's cooked from required products: French bean, eggplants, tomatoes, sweet pepper, onion, garlic, bunch of coriander, basil, vegetable oil, salt and pepper by taste. Sometimes people add potato and hot pepper. With different names in Caucasian and many Turkic countries this dish is eaten by many people. In Bulgaria and Turkey, this dish is named "imambayaldi". If translated literally - Imam has fainted. European variety is vegetable saute.
